How do you signal into a tolt or flying pace?

I don't actually own an Icelandic horse but am seriously thinking about buying one next year.But what I was wondering how do you signal the horse into a tolt or flying pace. I know on normal western pleasure horses you just kick to go from walk to trot and such. But what I want to know is is there a special signal or an order they go in and if so what. I have one other question I have been instrusted by a trusted horse person that when I buy a horse I should get one between 5-12 clearly broke but not to old. But since Icelandics mature later and preform best in their 20's would that range change for an Iclandic? To answer these you might need a little background so here it is I'm 13 now and currently live Tacoma Sometime next year my family and I will be moving and I will be able to get a horse.I will use it probably only for pleasure and trail riding. I'd also like to know if you think an Icelandic would be well suited for my purpose or if it's just to much horse. Elizabeth
